Shakshuka
SERVES 1
A Mediterranean dish of eggs cooked in a spicy tomato sauce, shakshuka is good at any time of day.
1 tbsp olive oil 1 tbsp onion, diced ¼ cup canned tomatoes 1 tbsp tomato sauce ½ tsp garlic, minced 1 pinch chilli powder (optional) 1 pinch ground cumin 1 pinch ground coriander 1 pinch paprika 3 eggs 1½ tsp fresh parsley, chopped 1 Give your egg skillet a quick shot of cooking spray and put it over a medium heat. Add the olive oil and onion, then sauté for 2-3 minutes or until softened. Stir in the canned tomatoes, tomato sauce, garlic, chilli powder, cumin, coriander and paprika, thenlet it simmer for 1 minute.
