No, when this 95-year-old Taranaki woman isn’t aqua-jogging at 7am every morning, she can be found devoting her time to her community, perhaps most famously at the end and start of every year directing people at New Plymouth’s TSB Festival of Lights. CHOPPED HERRING This recipe was originally submitted to The Menorah Cook Book by Mrs E Paykel. 1 thick slice bread 1 tin roll mops (pickled herring fillets) 1 onion, finely grated 1 cup white vinegar 2 heaped tsp brown sugar 6 black peppercorns 3 cloves Salt, to taste Lemon juice, to taste Bagels, to serve Lettuce, to garnish 1 Remove crusts from the bread. 2 In a large bowl, mash the herrings.
