SPICED MINT & CITRUS TEA
SERVES 6
4 peppermint tea bags
1 cinnamon stick
2 whole star anise
1/3 cup caster sugar
2 × 5cm strips lemon rind
4 cups boiling water
1 small orange, washed, halved, thinly sliced
3 cups orange juice
1/3 cup torn mint leaves, plus extra, to serve Ice cubes, 6 thin pineapple wedges, 3 halved bruised lemongrass stems, to serve
1 Place the tea bags, cinnamon, star anise, sugar and rind in a large heatproof bowl. Add the boiling water and set aside for 30 minutes to steep.
2 Strain into a lar ge serving jug, discarding the solids. Add the orange slices, juice and mint. Chill for 2 hours.
3 Place the ice cubes in serving glasses and fill with the iced tea. Garnish…
