GREEK FISH STEW
SERVES 4
3 tbsp extra virgin olive oil2 garlic cloves, crushed and chopped1 red onion, sliced into rings1 tsp fresh rosemary1 tbsp oregano, fresh or dried1 tbsp capersHandful of Kalamata olives1 cup chopped celery and leaves2 medium-sized potatoes, scrubbed and diced2 carrots, peeled and thickly sliced400g can crushed tomatoes1 lemon, zest removed and cut into wedges800ml fish stock½ cup white wine400g fish, cut into bite-sized chunks400g can white beans
