POLYNESIAN MEATBALLS
SERVES 4-6
2 cups brown rice
1 can Dole Crushed Pineapple
500g chicken or turkey mince
3/4 cup spring onions, thinly sliced, divided
1/2 cup teriyaki sauce, divided
1 egg, beaten
1 tsp ground ginger
1/2 tsp ground nutmeg
2 tbsp orange marmalade

1 Preheat oven to 180ºC. Cook rice according to the packet instructions.
2 Drain 1/2 cup crushed pineapple, reserving the remaining pineapple and juice for the sauce.
3 Combine the mince, rice, 1/2 cup drained pineapple, 1/2 cup spring onions, 1/4 cup teriyaki sauce, the egg, ginger and nutmeg in a large bowl, mixing well.
4 Scoop the mixture and roll into desired meatball size. Place on an aluminium foil-lined baking sheet. Bake for 25 to 30 minutes or until done.
