GUMBO RICE SOUP
SERVES 6
2 tbsp olive oil
2 spicy pork sausages
2 celery stalks, chopped
1 onion, chopped
1 green capsicum, seeded and chopped
4 garlic cloves, crushed
2 potatoes, peeled and chopped
2 bay leaves
1 tsp cayenne pepper
¼ cup plain flour
1½ litres chicken stock
400g can diced tomatoes
1/ 3 cup long-grain white rice
750g green prawns, peeled and deveined
Parsley leaves and corn scones, to serve (see left)
1 In a large, heavy-based saucepan, heat half the oil on high. Brown sausages for 3-4 minutes, turning to prevent burning. When cool enough to handle, thinly slice and set aside.
