1¼ cups caster sugar
1 tbsp cornflour, sifted
1 cup thickened cream
¹/ ³ cup lemon curd
1 mango, thinly sliced
1 banana, sliced
6 lychees, sliced
1 passionfruit, pulp Small mint leaves, to serve
1 Preheat oven to 150°C. Line an oven tray with baking paper.
2 In a bowl, using an electric mixer, beat egg whites until soft peaks form. Gradually add the sugar, 1 tbsp at a time, beating between each until dissolved and mixture is thick and glossy (about 8 minutes). Beat in the cornflour.
