How to open SCALLOPS If you’ve managed to get a bag of freshly harvested scallops that are still in their shells, or you’re trying to be fancy when serving your seafood creations, here are a few tips on how to open and prepare your succulent scallops. 1 Hold the scallop convex side down in your palm. Insert a sharp knife or oyster shucker between the two shells, close to its hinge. 2 Work the knife further in and twist to pop the shells apart. 3 Run the knife around the edge of the shells to separate the membrane before removing the top shell. 4 Pull the dark bits away and discard. There is this whole thing happening at the moment with classic works of literature being re-imagined. So a famous author will take a novel by Jane Austen or a play by Shakespeare and re-tell it from a modern perspective. A part of me thinks they should all stop pillaging the past and come up with some new ideas, however, I have enjoyed some of the re-imaginings I’ve read. The latest is from Anne Tyler, widely held to be one of America’s greatest living novelists, who has modernised the Shakespeare comedy The Taming of the Shrew. This was surely an unenviable task. I’ve just made yet another discovery about men which I hope will enlighten the fairer sex as to certain behaviours of their husboy* and lead to a more harmonious existence. Auckland has added another light to its skyline with the arrival of Affinity, an interactive sculpture of sound and light that aims to explore the effects of dementia. Spreading out across a 13-by-13 metre area and using 400 metres of LED lights, the spectacular installation reflects the connectivity of the brain, while transmitting stories from some of the 60,000 Kiwis affected by the disease. Actress Amy Usherwood plays Louise Hillary in the drama series Hillary, which is currently screening on TV One. My favourite book ever is... The Collected Works of Shakespeare because I have been reading and performing Shakespeare since I was a kid, and I love his plays. I find them challenging and insightful. He wrote some of the wittiest banter and most beautiful poetry. He also wrote some incredibly strong and complex female characters. My book of the moment is... The Catcher in the Rye by J.D. Salinger. I love the way Salinger captures the thoughts of a teenage boy on the cusp of manhood. It’s very funny and at the same time moving.
