TWENTY-SIX YEARS ago, Andrew Tarlow, his then-business partner Mark Firth, and a young chef named Caroline Fidanza opened Diner, the Williamsburg restaurant that transformed the Brooklyn dining scene and, some have argued, Brooklyn itself.
