Who picks the doctors? A New York City research and information company, Castle Connolly Medical Ltd., a subsidiary of Everyday Health Group, publishes an annual database, Top Doctors: New York Metro Area, which lists those whom Castle Connolly has determined to be in the top 10 percent of the region’s physicians—nearly 6,000 in all. For the past 21 years, Castle Connolly has been providing New York with a shorter version of this list for the magazine’s “Best Doctors” issue. Space prohibits New York from publishing the full list; this year, the doctors on our list number 1,390. How does Castle Connolly decide which doctors are the best? WHEN DANNY BOWIEN opened the first New York location of Mission Chinese in 2012, Angela Dimayuga, his then head chef, asked if she could install a fish tank in the dining room. She’d grown up going to Cantonese restaurants and felt it would be an easy way to reference them. Plus, she says, the whole place felt very ’80s already; sticking a tank—which she filled with Glofish tetras (seen here, $8 at theifishstore.com) and Chen Chen & Kai Williams–designed acrylic pedestals—between the banquettes made sense. The Chinese dumpling shumai (or siu mai or shaomai) originated not in Guangdong, as New York dim sum devotees might presume, but in the Inner Mongolian capital of Hohhot, or so sayeth our Inner Mongolia dumpling sources. This goes some way in explaining the presence of lamb shumai on the menu of Jiang Diner, a new East Village restaurant specializing in the cuisine of northwestern China. Here, the kitchen encases mildly seasoned ground lamb in a delicate wheat-flour wrapper and seals it in a manner more akin to xiaolongbao than the familiar open-top shumai shape. FOR THOSE UNFAMILIAR with the joys of Georgian breads (or Instagram), adjaruli khachapuri is a loaf with tapered ends and a hollowed-out center filled to the brim with molten cheese. It’s topped with an egg and enriched with butter. When it arrives at your table piping hot, it looks like something that might have been invented by a Georgian cook who did a stage at Pizza Hut. It is, for most sentient beings, irresistible. Georgian restaurateurs in New York naturally play up these cheese-bread canoes. IT SPEAKS TO ME, by Jori Finkel, will be published by Prestel on May 28. FOR A NEW book, It Speaks to Me, Jori Finkel asked 50 artists to discuss an artwork they find inspiring. Not their favorite artwork of all time, housed anywhere, but something from a museum near where they live. What might they take a friend visiting from out of town to see? Together they practiced lines from the book, planning to use them on girls in nightclubs. “Would you like to kiss me? I didn’t say you could.” In real life, pickup artistry made Truth4lie anxious.
