Chicken Parmigiana Rissoles Serves 4, Prep and Cook: 45 mins 2 eggs, lightly beaten 1¼ cups panko breadcrumbs 2 tblsps plain flour 1 cup tomato pasta sauce 1 cup grated mozzarella Mashed potato and steamed green beans, to serve RISSOLES 500g chicken mince 3 green spring onions, finely chopped 2 tsps chopped fresh thyme, plus extra sprigs, to garnish 1 egg yolk ¾ cup panko breadcrumbs ¹› ³ cup grated parmesan 1 To make rissoles, combine all ingredients in a bowl.
