 Cristina Spinei grew up dancing, but what drew her to the craft was less the movement and more the classical music accompanying her pliés and pirouettes. Her mom noticed her fascination with music and enrolled Spinei in piano lessons, and, by age 10, she was crafting her own melodies. “I’ve kind of always known [composing music] is what I wanted to do,” Spinei says. “I want to do something a little more cross-genre. Lockeland Table chef Hal Holden-Bache had a lot of time to plan his menu in the year it took to build out his popular East Nashville eatery. Two menu items that he knew he would feature were his signature strip steak topped with a tangy chimichurri sauce and an appetizer of chicken liver pâté in a jar topped with Benton’s bacon fat and the chef’s own smoked peach preserves. Knowing that peaches were seasonal, Holden-Bache took time during that long year to can an abundance of his jam while the fruits were at their peak. Today, business is brisk at Lockeland Table, and customers have long clamored for the chance to take home extra jars of those sweet-smoky preserves. Bread baker Michael Matson loads wood into his oven, placing each log into a fort-like pile taking into account temperature, airflow, and combustion. It’s one of the first steps in his two-day bread baking process, which also involves mixing and shaping the dough by hand, fermenting overnight, firing the ovens, and finally, in the wee hours of the morning, baking his breads. The oven, a mammoth contraption that’s parked outside of the communal Citizen Kitchens, where the baker rents space, is the heart of Matson’s operation. After he fires it up, and a few hours later, extinguishes it, the masonry within is saturated with heat. Ten or 11 hours later, some time around 2 or 3 a.m., he sweeps out the ash and coal, and slides in loaves of sifted…

 Though we typically turn our attention to the big, gobbling bird this time of year, there is something both sweet and civilized about the preparation of quail. Notably smaller and far quicker to prepare than other poultry, quail allows for individual portions that have the ability to wow guests—both in how they look and how they taste. Prima chef Sal Avila has been cooking quail for years and sources directly from Manchester Farms, a second-generation family-owned quail farm in Columbia, South Carolina. A bonus: They ship to home cooks, too. “What I love is that they offer a semi-boneless bird, which is way easier to prepare, especially at home,” he says. Holley Maher is the founder and creative director of Wink Wink Paper Co., a local stationery company with a workshop and storefront in Germantown’s 100 Taylor Arts Collective. Wink Wink Paper Co. is a collection of Maher’s unique designs, which feature hand lettering and illustration and often cheeky catchphrases, like “All you have to do is be nice and do awesome sh*t,” and “It’s your birthday! Let’s drink.” We asked Maher to design the maps for The Ultimate Shopping Guide, and her results are both whimsically fun and true to the neighborhoods she captured. Kick off the holiday season with a refreshing hike while supporting a local cause. The 12th annual Hike for the Homeless on November 5 features a choice of two paved trails (2.2. miles and 3.2 miles) at Edwin Warner Park, and both routes are stroller-and dog-friendly. Teams are highly encouraged, and there is no entry fee or minimum donation fee. Hike for the Homeless includes children’s activities, such as face painting and inflatables, and live music—all while supporting solutions to homelessness. With more than three decades of experience fighting family homelessness, Safe Haven Family Shelter is the leader in empowering Nashville’s homeless population. The nine-time Tony award-winning musical, The Book of Mormon, created by South Park guys Trey Parker and Matt Stone and Avenue Q’s Robert Lopez, has been a standout cheeky and boisterous Broadway go-to for more than five years. Beekeeper Matt Slocum came into the trade, like many, as a side project. For 25 years, he’s been the lead guitarist and songwriter in the band, Sixpence None the Richer, as well as a session cellist. If you were to judge the new brick-and-mortar location of Funk Seoul Brother (FSB) on its name alone, you’d probably surmise that it’s a spot that doesn’t take itself too seriously. A play on the Fatboy Slim song from the ’90s, FSB started as a food truck, peddling what owner B.J. Lofback calls his interpretation of Korean and Japanese street food. “Sandor Katz’s book, Wild Fermentation, changed my life,” tempeh maker John Parker affirms. In 2009, the Alabama native was living in Brooklyn, New York, when he received the book from a friend. It sparked both a passion to study fermentation and a memory. Parker recalled meeting Katz years ago and decided to contact him. It was then that he learned about the intensive fermentation workshop Katz was conducting at Little Short Mountain Farm in Tennessee. Parker signed on.
