Christiane and Gilles Appert are justly proud of their garden in Normandy. After all, they built every corner of it with their own hands. Hard to believe, this idyllic property did not look promising when they bought it; the 17th-century stone manor house was in ruins, and the 16,000 square foot garden was an overgrown wilderness. “We created everything you can see,” says Christiane, proudly looking out around the property. A presbytery dating back to the 17th century, the building was converted into a farm before Cécile and Franck transformed it into the wonderful brocante store and tea salon we see today. When they purchased it a few years ago, it was a simple structure that lay across two separate levels that followed the slope of the property. The couple rolled up their sleeves and remodeled the interior, careful to keep its original character. Stone steps were installed leading from the upper level tea salon to the lower level boutique. A local blacksmith forged beautiful iron handrails for the walls on either side. The gardens were also brought back to life with careful planting and pruning. Zucchini Flower Tart SERVES 4 Preparation time: 20 minutes Cooking time: 30 minutes • 1 pre-made pie dough (about 260 g or ½ lb)• 7 tbsp (100 g) fresh goat cheese• 10 small zucchini with their flowers• 10 cherry tomatoes• ½ cup (50 g) grated parmesan cheese• 2 tbsp olive oil• 1 handful borage flowers• Guérande salt and pepper Preheat your oven to 180°C/350°F. Clean the zucchini with a damp cloth (to avoid soaking the flowers) and remove the central pistil with your hands. Roll out the pie dough and prick with a fork so it doesn’t swell.
