01\Lovage Pesto Carrots

BABY CARROTS, 600GA GARLIC CLOVECELERY LEAVES, A BUNCHBRAZIL NUTS, 100GCANOLA OIL, 200MLPECORINO, 100G, FINELY GRATED
METHOD
Roast the carrots for 20-30 minutes at 180°C with a little oil and sea salt. Meanwhile, blitz together the garlic, herbs, nuts and 200ml of oil. The good plant fats in nuts and canola make it easier to absorb the carrots’ antioxidant nutrients. Add the cheese and mix well. A single Brazil nut contains your RDA of selenium, too, for healthy metabolism. You’ll make faster work of that turkey.
