MEDITERRANEAN-STYLE STUFFED LAMB LOIN

INGREDIENTS
2tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, finely chopped
30g spinach leaves, shredded
Handful of fresh basil, shredded
75g feta cheese, crumbled
900g boneless lamb loin
Salt and pepper, to taste
TO MAKE
1 Preheat oven to 170°C/gas mark 3. In a medium-sized skillet, heat 1tbsp of the oil over medium heat and cook thee onion and garlic for about three minutes. Add the spinach and basil, then cook until the spinach wilts, about two minutes. Remove from the heat and mix in the feta , then set aside.
