ESPRESSO MARTINI-GLAZED HOT CROSS BUNS PREPARATION TIME: 5 mins COOKING TIME: 10 mins MAKES 6 ½ cup caster sugar 60ml hot espresso coffee 20ml coffee flavoured liqueur 1 tsp vanilla extract 6 traditional fruit hot cross buns Marscarpone, to serve STEP 1 Place sugar, coffee, liqueur and vanilla into a small saucepan over high heat. Stir until sugar has dissolved. Bring to the boil, without stirring and cook for 1½ minutes allowing it to bubble vigorously, until thickened to a syrup consistency. Set aside to cool for 5 minutes. Easy growers Edible plants are just as easy to grow as ornamentals. So here’s a selection that’s quick and easy for your home garden, especially if you’re a beginner. Pork and chive dumpling salad, recipe page 82 GRILLED CHICKEN AND BURRATA SALAD Thinly slice two chicken breasts and cook on a chargrill pan until lightly charred and cooked through. At the same time, grill sliced sourdough until lightly toasted. Place a ball of burrata in the centre of a serving platter. Scatter with a generous pinch of crushed fennel seeds and finely grate a little lemon zest over the top. HOW TO REMOVE A STONE SAFELY FROM YOUR AVOCADO Removing the slippery, tricky-to-get-a-hold-of stone from an avocado, using a knife to stab or strike at it, has ended in many hospital visits. So for you to avoid the emergency department you can safely remove your stone with a spoon! Slice in half by running a knife lenthways around the circumference of the avocado, that is from top to bottom and back. Pst, do this on the bench, not in your hand. Twist each half in opposite directions and pull the halves apart. Using a teaspoon, gently insert the edge of spoon in between the stone and the flesh, working your way around the stone until it is loose. Use the spoon to scoop out the seed.…

SPICY ‘N’ SAUCY Chargrill a couple of capsicums until blackened, set aside to cool. Discard skin and seeds, blend with a clove of garlic, a generous glug of olive oil, splash of red wine vinegar and a sprinkle of smoked paprika until smooth. Season and stir through chopped parsley. Every year, a Sunday or two before Anzac Day, the Megalong Valley community comes together to pick rosemary - and stays on for lunch. The rosemary grows on the farm of David and Cathy Harris, in half a dozen 25-metre rows on a sunny, well-drained slope on the property. The rosemary is cut to the ground, then packed off and sent to Legacy where volunteers snip it into sprigs that are sold to raise money for widows and children of Australia’s servicemen and women. It’s a philanthropic act of remembrance for Cathy and David, whose fathers both served in World War II, as well as a fun day for everyone involved.…
