½ red onion, thinly sliced3 garlic cloves, thinly sliced⅓ cup extra virgin olive oil, plus extra for drizzling4 button mushrooms, thinly sliced2 tsp dried oregano½ cup pitted black Spanish olives, thinly sliced1-2 roasted marinated red capsicums, thinly sliced2 marinated long-stem artichokes (or 4 short-stem), halved¼ cup salted butter2 cups arborio rice200g tomato passata (puréed tomatoes)1 punnet cherry tomatoes or 2 small trusses of baby truss tomatoes¾ cup sliced mozzarella1 burrata, torn½ cup finely grated parmesan, for sprinkling50g rocketSmall handful of basil leavesChilli flakes 1 Preheat oven to 180°C fan-forced.
