ONION, PISTACHIO & SAGE STUFFED TURKEY
SERVES 8
1 tbsp olive oil, plus extra to drizzle
1 large onion, finely chopped
3 cups fresh breadcrumbs
1 bunch sage, thinly sliced
2 cloves garlic, crushed
½ cup pistachios, chopped
50g butter, softened
4–5kg turkey buffe, deboned and thawed
1. Preheat oven to 180°C. 2. Heat oil in a small frypan and cook onion for 3 minutes until soft. Combine onion, breadcrumbs, sage, garlic and pistachios. Season well. Rub in butter with fingers until mixture sticks together. 3. Lay turkey out, skin-side down, on a clean surface. Heap stuffing along the centre of breasts.
