Carrot and oats burger
INGREDIENTS
4 tbsp olive oil, divided1 small onion, finely chopped2 celery sticks, peeled and finely chopped1 clove garlic, finely chopped3 large carrots, peeled and grated150g cooked brown rice150g porridge oats400g extra-firm tofu1 pinch cayenne pepper, optional1 tbsp nutritional yeast120ml water2 tbsp soy sauce, or liquid aminos90g panko breadcrumbs110g non-dairy plain yoghurt1 tbsp vegan mayonnaise1 tbsp chives, chopped4 seeded burger buns½ small curly lettuce, leaves separated and torn SaltFreshly ground black pepper
METHOD
1. Heat 1 tbsp oil in a large frying pan set over medium heat until hot. Add the onion, celery, garlic, and a pinch of salt, sweating until softened, 4-5 minutes.
