CREAMY TOMATO PASTA WITH BUTTERBEANS Serves 4 Oil for frying1 chopped onion2 chopped cloves of garlic1 tbsp paprika½ tsp chili flakes2 tins of butterbeans, drained3.5 oz (100 g) tomato purée3 fl oz (1 dl) heavy cream1.7 oz (50 g) parmesan, grated (plus extra cheese as a topping)0.9 lb (400 g) pasta Fresh basil (optional) Start by chopping onion and garlic. Heat up a saucepan with a bit of oil, and fry onion, garlic, paprika and chili flakes until the onions are soft and slightly golden. Boil the pasta in the meantime. Today, the orangery is a place for both everyday life and parties. Tine and Tommy have set up a charming bar area, and when friends and family stop by, they often end up at the bar – no matter the season. In summer, the room is crammed full of green plants, and you’ll find plenty of small French flea market treasures that add history and atmosphere to the place. This room oozes of life and esthetics. For many years, Lisbeth dreamt of having an orangery where she could combine flowers, light and life. When she turned 50, her dream finally came true, and today her beautiful orangery is like a green oasis in the middle of her garden – a functional place full of soul. The orangery measures 511 ft2 (47.5 m2) and it’s been drawn to fit her needs. The walls are high, making room for eucalyptus, fig and olive trees, and big garden beds and pots add plenty of life to the place. I’ve been looking forward to this time of the year for a very long time because this is when all the things that I’ve been growing since spring finally blossom in my garden. Fantastic favorites such as sunflowers and dahlias make this season such a lush, beautiful and colorful time of the year. I use all these flowers to create some beautiful bouquets that make me really happy. A big wreath made of various types of sunflowers – attached to a floral foam ring – hangs on the door to the orangery, and it brings us and all the small birds plenty of joy. Late summer is here and there is just something special about this time of the year. It arrives quietly and softly – like a dear friend who isn’t busy and who just sits down next to us and reminds us to enjoy whatever is left of the wonderful summer. In 2017, they started building the foundation of the orangery. Jens is a bricklayer so he did the bricklaying work himself. During the next few years, he was working in the orangery whenever he had time, and whenever he had collected enough recycling materials to do the next part of the project. The couple wants everything to be recycled for the sake of the environment, but also to reduce costs. So, the windows and the doors are also recycled, and the flooring is made of beautiful, old, worn bricks from a mansion. Back then, there were dairy cows and beef cattle at the farm and the place was humming with true farm life. But little by little, new ideas came to life. The couple decided to reduce the farming work and add new life and purpose to the farm buildings. The original shape of the boathouse – narrow and tall, and needed for keeping boats here in winter – has been preserved. Janne has sawn, painted and furnished the place herself, using whatever materials she has collected over the years. She has added old windows and doors to the original gate area, and the old wooden gates have been turned into decorative shutters on each side of the entry. We’re visiting Dorthe and Claus in their wonderful allotment hut in the Danish town of Odense. The couple bought the hut in 2019 and since then they’ve spent five summers turning a neglected hut and garden into this lush place. When they bought the place, only a few plants were worth saving. There was neither a terrace, nor a usable greenhouse, and the hut itself was inhabitable. For this reason, the couple spent the first few years renovating, focusing on the hut, the greenhouse and the terraces which now frame the garden in a very harmonious way. Claus, who’s an electrician, is great at implementing Dorthe’s ideas, and he’s done the electricity, constructed the greenhouse, done the plumping and carried out "a million" other handyman jobs. In a typical villa from 1922, located in the oldest part of the Danish town of Sorø and featuring a wonderful view of a lake and the forest, Marianne Ejby Magnussen and her husband, Steen, have created a home full of soul and personality. The house measures 2,370 ft2 (220 m2) on two floors, and it’s surrounded by a big, lush garden and a kitchen garden that brings so much joy almost all year round. After a few years living in Switzerland, Marianne and Steen took over the place in 1993, and they did some thorough renovation work.
