RHUBARB TART WITH VANILLA CREAM AND AN OKARA BASE Tart base:0.4 cup (1 dl)okara (soy pulp)1.2 cup (3 dl)wheat flour5.2 oz (150 g)cold butter2 tbsp sugar1 tsp salt3 fl oz (1 dl) water 7 Tart filling:7 oz (200 g) rhubarb3.5 oz (100 g)strawberries6 fl oz (2 dl) heavy cream1 egg3 tbsp sugar Mix all the ingredients for the dough in a bowl and knead it until it turns smooth but sticky. Place the dough in a tart mold and bake it in the oven at 347°F (175°C) for 10-15 minutes until it turns light brown. In the meantime, mix egg, heavy cream and 3 tbsp sugar. I In the middle of the peaceful nature of the Danish island of Falster – hidden amongst lots of trees and close to the beach – is a special summer cottage full of history, soul and personal details. The house belongs to Susanne and her husband, Hans. The couple has two daughters. The family bought the place in the summer of 2020 during corona. "Like so many other people, we went for a lot of walks back then", Susanne says. "In fact, I had already saved a screenshot of the house back in October 2019, and one day, I suggested going to Falster to look at it. The store Luffesantik is run by Morten and Allan – and not least by the dog Luffe who is the inspiration behind the name of the store. It all started out with a shared passion that emerged when the couple lived on a deserted farm in Sweden back in 2016. Here they discovered the joy of hunting for treasures at the Swedish flea markets, loppis, and in antiques stores, and they enjoyed being seduced by unique, worn and funny items full of patina, soul and stories. Later, their journey took them south to all the brocante and antiques markets in France where they found new inspiration and even more treasures. The roadsides are full of flowers now and we make lots of bouquets. Wanting to get to know the Swedish summer flowers better, I found a decorative poster showing all the different flowers and their names. I’ve framed it and hung it in the kitchen. The kitchen bench was a gift from a Danish girlfriend who wanted me to renovate this old, Swedish bench. Now it’s part of my interior design and it fits perfectly. When we moved into the torp, I knew that this old glass veranda was going to be full of geraniums because such rooms are perfect for these beautiful, old plants. Last summer, we put up a glamping tent here at Kærby Mølle – and what a treat! Waking up to the sound of the purling brook and enjoying the view of the lake and the shadowy trees around us was nothing short of magical. We were embraced by nature without having to compromise on comfort. The water in the brook is clean enough to be used as drinking water, and we can make an open fire and enjoy the evenings underneath the stars. At the same time, we’ve got access to a proper bathroom in the mill building not far from the tent – the perfect balance between primitive and comfortable living. This trailer is everything but standard. It’s been carefully renovated and turned into a small home with lots of soul. The walls have been covered in beautiful wallpaper and you’ll find flowers, brocante treasures and funny flea market finds everywhere. These things add a unique feel. Tomato baskets These raw ingredients are pure energy for the body, and the airy purée made of shredded coconut and fresh microgreens is just such a wonderful taste experience. 4 tomatoes0.6 cup (150 ml) almond milk3 tbsp shredded coconut1 handful of your favorite microgreensSalt and pepper Wash the tomatoes and cut off the upper part. Remove the fleshy parts from the inside (you can use them for a sauce or a soup, so don’t throw them away). Mix almond milk, shredded coconut and microgreens in a bowl until you’ve got a creamy, airy purée. Add more shredded coconut or almond milk if needed. In the small village of Montréal in southwest France, you’ll find Camellas-Lloret – a beautiful "maison de maître" from the 1700s where peace and esthetics go hand in hand. The house was constructed in 1789 and consists of the couple’s private home and a Bed & Breakfast featuring four spacious rooms with private bathrooms as well as a rustic apartment that used to be a carpentry workshop. This home belongs to Karl Andersson and Lina Andersson Eriksson, two photographers who left Stockholm to establish a new life in a historical Kungsgård in Vadstena. This creative couple has added new life to the property from the 1300s which became an official Kungsgård in 1527. Karl and Lina moved into the home in July 2023 and they’ve been adding their personal touch to the place ever since. They’ve carefully renovated the northern wing and have turned it into a charming Bed & Breakfast, and they’re now slowly renovating the southern wing which is their private home. Mette and Anders both turned 50 in 2024, and they had been dreaming of celebrating their birthdays in beautiful Tuscany. To make this dream come true, they hired Sif and me to organize an unforgettable party under warm skies. The couple invited 20 close friends, and we spent three fantastic days in Italy in this wonderful, little farmhouse full of true Italian charm.
