As Gitte opens the big, heavy front door and invites us inside, it’s almost like travelling 45 years back in time. The place looks just like it used to because it has been carefully renovated. The rooms that had been destroyed over time have been brought back to life, inspired by the hotel’s heyday some 100 years ago. Line decorates the place in a traditional way with big Christmas trees adorned with red, golden and white Christmas bulbs, combined with wreaths, spruce garlands, stars and elves. When Tine goes shopping for items for her brocante store or takes pictures for our magazine, she often comes across funny and odd things that she brings home. In Sweden, she fell in love with the Swedish tradition of decorating with crispbread. Traditionally, crispbread is from Sweden and it was developed as a practical kind of food that could be stored for a long time without going bad. Usually, crispbread was baked during autumn after the harvest and then it was stored as food for the cold months. It was baked as round, flat cakes with a hole in the middle, allowing people to hang it on sticks or with string for easy drying and storage. WAITING-FOR-THE-WEEKEND NUT SNACKS 10-12 pieces 2.6 oz (75 g) almonds2.6 oz (75 g) sunflower seeds2.6 oz (75 g) raisins2.6 oz (75 g) dried, chopped prunes4 tbsp shredded coconut3 eggs1 pinch of salt Pour the almonds into a sieve and rinse them under running water. Distribute them on a baking tray covered with greaseproof paper. Add sunflower seeds and place the baking tray in a pre-heated oven at 302°F (150°C). Bake the mixture in the oven for 20 minutes. Considering the high cost of renting an apartment in Copenhagen, the couple decided to look for a thatched house in North Zealand where they could live and work. They couldn’t find a suitable place, so they extended their search to include the island of Funen and the area of Djursland, and that’s where they found "Ladefogedgaarden". Although the farm is from 1735, the couple immediately fell in love with it. The farmhouse was renovated in 1985 and the couple saw lots of possibilities in this big building. They turned it into a luxurious B&B with lots of rooms and a large room which they use for various events. Leading up to Christmas, a moss roof is added to this small bird table. It’s full of apples and bird seed balls from the pet shop. Use a piece of steel wire or a straw wreath to make your wreath. Tie apples, balls for birds from the pet shop, spruce and cones onto the wreath, and add small pieces of wood for the birds to sit on whilst eating. You can also add other types of fruit or nuts to make the wreath even more interesting. Cones with grease is classic winter food that offers the birds a good source of energy. Finely dice the burnt fig and distribute the pieces on the bread. Place the bread in the oven at 347°F (175°C) and bake it until the cheese has melted and has turned golden. This old torp is called Torp Ekekullen and was constructed in 1914. It’s located in scenic Gustavsfors in Dalsland in Sweden. For the past two years, the couple has been renovating the old house which was in need of lots of TLC after having been abandoned for several years. Every room has been given a makeover with light, airy colors and nostalgic wallpapers, including some from Borås Tapeter and William Morris. The furnishings are new and old flea market finds, and as the couple enjoys visiting flea markets and antiques stores, they’ve found lots of treasures for their torp in such places. One of my favorite Christmas pastimes is making ginger bread cookies – preferably small fairy-tale houses. Every year, I create a new little free-style house. I find inspiration in all kinds of places. This is my little "torp house" which is inspired by Torp Ekekullen and an English cottage. I make the houses at the beginning of December so that we can enjoy them throughout the entire Christmas month. Pia and Niels Chr. share the work of running the place and developing Kollerup and the land. The original Birkedommergård is located in the village of Voldby. The old farm became too small for all their family activities, so in 2004, they decided to "move" the entire building to one of their fields right outside the village. Constructing an entire building has been crazy. Louise is an architect and she was able to design everything herself, and the entire construction project has been one large family project. "We moved in on December 1st 2004, so we had to unpack, furnish the place and decorate for Christmas at the same time. In our family, Christmas is a very important tradition that we didn’t want to miss." Leek dish 1 lb (500 g) leeks4 tbsp olive oil1 tbsp maple syrup2 tbsp dried Provence herbs0.6 cup (150 ml) almond milkSalt and pepper Pre-heat the oven at 392°F (200°C).
