She combines lots of twigs with withered leaves, flowers, fruits and other materials that she finds in the forest or in the garden. Grethe Fjordside Stagis Rosenstrøm lives in a townhouse in the town of Helsinge on northern Zealand in Denmark. She works as a multilanguage learning consultant and each day, she meets the most fantastic children and adults. Born and raised in the Danish town of Thyborøn, she’s always been attached to the town so when she, back in 2018, noticed that this house was for sale, she just knew that it was going to become her holiday home. The house is a former milk store and private home that had been constructed in 1933 and later had been renovated by various owners. Farmer’s soup ½ lb (250 g) minced beef 2 chopped onions 1 vegetable stock cube ½ lb (250 g) finely diced potatoes ½ lb (250 g) carrots 3.5 oz (100 g) parsnip/celeriac or other left-overs ½ lb (250 g) white cabbage 1 tin of chopped tomatoes 2 tsp basil, 2 tsp thyme, 2 tsp oregano 2 tbsp soy sauce Salt and pepper Coarsely dice all the vegetables. In the previous edition of the magazine, we took you along to a "party of lights" in Fru Pedersens have (Mrs Pedersen’s garden) and it was a magical evening featuring hundreds of candles throughout the entire garden. When you have a natural garden like ours here at Kærby Mølle, you’ve got the perfect backdrop for these small elf houses that really inspire children and adults alike. When our children were young, we used to tell them stories about the elves moving into the loft as early as in November. "Four years ago, in the beginning of May, we found out that this house was for sale", Jessica Andersson, a former JDL representative in Sweden, tells us. It wasn’t love at first sight but the chestnut trees were blooming, and Jessica and her husband, Christian, liked the stone walls fencing in the house and the plot of land that measures 2 acres (8,000 m2). The actual house, originally a wooden house from 1917, had been renovated in the 1970s and was far from pretty. Still, the couple has managed to renovate it and reestablish the original condition, turning the house into a beautiful and contemporary home. Here at Kærby Mølle, we enjoy the small greenhouse – made of recycling materials – all year round and not only in the summer. In fact, the greenhouse is also very cozy in the winter and it turns quite warm when the sun is shining. Inside the greenhouse, we’re protected from the wind and when we wear a jacket, sit on a pelt and light some candles, it’s wonderful to sit here and look at the garden. The lamps are solar-powered and shine so nicely when it gets dark. We bring a cup of coffee or mulled wine and have a good old chat. This place has turned into our small "break room"! Potato and leek soup 4 big leeks 6 potatoes 1 stock cube Salt, pepper Bacon Clean and slice the vegetables. Boil them in water along with stock, salt and pepper for approx. half an hour. Blend the soup and add fried bacon to create a spicy taste. Storing your vegetables In general, vegetables such as the ones shown on these pages keep longer if you store them in a dry and cool place at 46-50°F (8-10°C), preferably in a dark place or covered up. Store them in a cardboard box or a wooden box. It’s a good idea to add an apple to your potato box because then they’ll keep fresh much longer. Don’t mix them with other vegetables. Getting a hold of old brass items is relatively easy. Most people aren’t interested in brass but Mette always collects brass items whenever possible. By now, she’s got a quite big collection, and on these pages, we’ll offer you plenty of inspiration on how to use brass in the upcoming months. On the coat rack are small bundles of spruce, combined with the most wonderful brass molds that have been hung on the rack using bast fiber. This old country villa, located in Hillerød in Denmark, is from 1929. Kim and Lene have been living here for the past 26 years. When they bought the place, lots of things had to be exchanged and renovated, including all the windows, the roof, the sewerage system, the kitchen, the bathrooms and all the floors. The garden also needed a complete renewal. Still, the couple saw the possibilities and fell in love with the small lake that belonged to the plot of land. Later, they added a nice, big terrace. In autumn, Ramona decorates her home with lots of pumpkins. They all have light and green colors so that they fit to her universe of subdued colors. On the table is a small arrangement that includes a bouquet of eucalyptus, chrysanthemum, English roses and yarrow. The pumpkins are called "Pink Sophie" and "Baby Boo", and – as always – they’ve been combined with lots of candles. You can also combine your pumpkins with old lanterns from the flea market. If you’ve got a lot of fabric and lace clippings, you can easily turn them into these wonderful pumpkins. This is recycling at its best and you can even use the pumpkins year after year. We have used old dresses, tablecloths and curtains for these creations. The sun is lower in the sky, it shines different into the house, and the light kind of expands and changes the room. Here at Cecilie’s house in the Danish town of Kerteminde, everybody loves Christmas and they start decorating the home as early as in mid-November. Cecilie loves to make wreaths and go for walks in the forest to find moss and cones, and she starts collecting materials in mid-October. Cecilie is crazy about simplicity and to her, simplicity creates a peaceful and cozy feel. For this reason, most of the Christmas decoration items consist of wreaths and small, fine details such as a twig with a small figurine or a gingerbread cookie.
