There’s something special about this season. It’s just so life-affirming when everything is fresh and new. Produce and flowers gradually appear out of the soil and the greengrocer’s tables are cramming full of nice, fresh, crisp vegetables. I love cooking with good, fresh ingredients, and arranging the food beautifully is almost as important as the taste. The same goes for sharing the meal with my loved ones. That’s something we’re very good at here in Denmark: Danish "hygge". At this time of the year, the gardens and the roadsides are full of flowers. One of the things that made Laila from Norway and her husband fall in love with this old smallholding from 1897, located close to the town of Løkken, Denmark, was all the original details, including the visible beams, doors and architraves. Actually, they’d like to renovate the kitchen at some point but until then, Laila has managed to furnish it in a very cozy way and she’s come to like it a lot. She even likes the dark tiles on the floor. The couple uses the house as a summer home and they love spending their weekends and holidays by the North Sea in Denmark. Creating a cozy countryside-style kitchen on a budget definitely doesn’t have to be boring or cost a fortune. This kitchen was made with old floor boards and poles from the recycling depot that were cleaned and then treated with wax. The domestic appliances were bought second-hand and the same goes for the furniture. If you don’t like open shelves, you can sew a small curtain like the one we’ve made for the shelves by the stove. Such a curtain will cover up all the smaller kitchen utensils that most of us have. Flatware and utensils are stored in jugs and glasses, and they’re allowed to be seen. Whenever the weather allows it, there’s nothing better than cooking outdoors. We love to cook over an open fire, make a BBQ or bake a pizza outdoors. Sometimes, it just turns into a simple meal but a meal prepared outdoors just tastes better. You don’t need to build a complete kitchen – less is more – and a small grill and running water will take you a long way. We’ve also found a small pizza oven which is heated with coal. The grill is moveable and can also be used as a gas burner. The rustic, wooden piece of furniture is practical and offers a couple of shelves for storing tableware and similar items. Right now, lots of delicious vegetables and fruits are in season, including asparagus, rhubarb and cauliflower. They’ve inspired me to create these tasty dishes full of vegetables. I hope that you’ll get inspired to organize a few meatless days, serving dishes full of taste and fresh ingredients. Every year, rhubarb juice is a must here at our house. It’s easily made, using 4.2 cups (1 l) water for each 1.1 lb (½ kg) of rhubarb, 7.2 oz (200 g) sugar and 1 vanilla pod. Pour everything into a saucepan and boil it for 10 minutes. Giovanna lives in Zurich, but she’s actually from the small town of Vitulano in southern Italy where she owns a small house that she’s been carefully renovating in order to preserve as many of the original elements as possible. In particular, she’s been wanting to preserve the beautiful, hand-painted walls and ceilings. The name of the house is "Il mandorlo di Pierina", Pierina’s almond tree, because there is an almond tree in the small front garden that blossoms so nicely every spring. Giovanna’s late mother used to adore this tree. Vitulano is a small, typical, Italian town with lots of original charm, and it’s beautifully surrounded by tall mountains, olive fields and vineyards. Amanda Kenney has a special talent for interior design that she frequently uses in her home which she shares with her husband, Shawn, and their three wonderful, grown-up children. This is the nicest time of the year in the cut flower garden. Everything is so luxuriant and you can pick the most wonderful bouquet every single day. On the next pages, Jane will show you her selection of decorations made with flowers from the garden. In the second half of May, when Jane made the centerpiece, she used late tulips along with ranunculus from the cut flower garden, catnip and columbine from the garden bed with herbaceous perennials, cow parsley and grass from the roadside as well as viburnum. In the good old days, you’d find a pantry – also called a buttery – as a separate building away from the farmhouse. Mette and Jens had always dreamed of having such a place so when they renovated their farm, they decided to create one below the stairs to the second floor. A space that couldn’t be used as part of the actual kitchen anyway and an area that was already a bit cooler than the rest because the outer wall isn’t insulated. Jens built the shelving units himself and he adjusted them to make them fit this special area. Here at Anette’s, there wasn’t enough room to make a "real pantry" so that’s why Anette decided to make a hidden pantry where she used to have space for three cabinets and the built-in oven. The doors are old, wooden doors that have been painted white. When Anette opens them up, they turn into a tabletop where she can do her kitchen work, and lots of shelves for storage. Anette’s dining room, located next to her kitchen, is the place where she loves to gather family and friends for a nice get-together. Anette loves recycling – adding new life to old things or using them in new ways. The lamps above the dining table were made out of two old heat lamps from a pigsty. She’s renovated most of the furniture herself. She’s painted the big cabinet in the kitchen and removed the doors. Now it’s home to all Anette’s wonderful, old chinaware that she’s collected over many years. Carina has built a charming "gin trailer", as she calls it, using an old trailer. It all started, she tells us, when their old trailer had become very worn. The family had been using it for 5 years but it had become quite old-fashioned. Carina had renovated it, installing a new vinyl floor, new cushions and new curtains, and had invested a lot of time in this trailer. Also, the family had spent lots of nice holidays in it so Carina didn’t want to just get rid of it. Then she got the idea of turning the trailer into a food truck/bar that she could use for her 40th birthday. Brian and Betina love working in the garden and they’re always working on new and exciting projects. They’ve always wanted to have their own little pond in the garden so when the opportunity arose last year, they started this big project. First of all, they needed to find out how to make a pond according to all relevant regulations. Betina explains that she’s happy that they didn’t know just how much work was coming at them. They did everything manually and even dug out the pond themselves to a depth of 4.3 feet (130 cm) and a volume of 185 gallons (700 l) of water! We’ve made the most wonderful, small ships as decoration items and they’re simply made with scrap wood, flower support sticks, lace, buttons, paper and similar items. Use your imagination and adorn them with whatever you’ve got in your cabinets. Nothing is as easy as buying a clematis with small flowers like the one shown in the pictures, planting it and then just leaving it to do its thing. Within just a few years, it’ll grow nice and big: as tall as 20 feet (6 m) and – according to the nursery – 1.6 feet (50 cm) wide. All of mine have turned a lot bigger; in fact, we’ve had to cut them back quite a lot each year. I usually just plant them in fine gravel and they look so nice against the boring walls of the house. You reach the house belonging to Dick Vervoordt by means of an uneven gravel road through the forest. By the last turn, the farm suddenly appears – partly overgrown with green vines. A pathway takes you through a green tunnel up to the farm which has been constructed in a U-shape and offers a beautiful view of the fields and the forest from the open side. It was this exact view that made the family fall in love with the place when they bought it. During the renovation work, the former stables and storage rooms became part of the living area. Lise has been living in this town house in Kerteminde, Denmark, for 30 years and her daughters, Molly and Nora, grew up here. Throughout her entire life, Lise has been interested in old, funny bits and pieces, and that’s why recycling has always been a matter of course in her home. As an example, the tiles in the patio used to be part of the Kerteminde square and the small greenhouse was built with terrace doors found in a dumpster. Lise planted the rose in the patio 25 years ago and now it’s as big as a parasol. You can easily imagine sitting underneath this plant when it blossoms. The basic concept behind Mette’s and Jens’ garden is their dream of being self-sufficient and having lots of fruit and vegetables as well as lots of flowers to eat or sell. The garden offers large volumes of delicacies that the couple eats all summer long or pickles and boils in preparation for the winter. The couple loves to sow and plant, care for the plants, harvest and prepare the food. Their children and grandchildren also benefit from this fantastic garden. They often spend time in the garden and some of them have their own garden beds and/or plants that they’re responsible for and care for all summer long. Yvonne loves to cook and because her kitchen is very small, she needed a place for storing canned foodstuff, her homemade jams, chutneys, pickles, dry food and tins. What now looks like a small pantry simply used to be an extra passage from the kitchen directly into the living room. Yvonne bought two Ivar cabinets from Ikea and changed the look a bit using color, wooden panels and door handles. She built the shelves above them out of some wooden slabs and she adorned the shelves by adding fillets. No space is wasted here. By the door, which isn’t used anymore, you’ll find a small table and more homemade shelves. If you’ve got the option and a spare room, there’s something special about turning a room into a dining room. Very often, old farms offer this possibility because they have lots of rooms and space. The dining room here at the farm "Præstøgård" is nice and airy, and it’s been furnished in shades of gray and white with a hint of romance through the flowered carpet, flowered cushions and the napkins on the table. A wonderful bouquet with seasonal flowers from the garden adorns the dining room and the bouquet has been made with a mixture of historical roses with a fantastic aroma and various roadside beauties. Renske, Herwin and their three sons live at a beautiful, old farm located in Oost-Groningen. The family became the happy owners of this beautiful place back in 2003. The farm is located close to a village but is still far enough from the village to be nice and quiet. The family has a very large garden that offers lots of privacy. When the couple bought the farm, it needed a bit of TLC so it was completely renovated with respect for the original character and using lots of recycled building materials. We’re always surrounded by all kinds of chemicals. In particular, cleaning detergents can contain lots of chemicals that are harmful to the environment and to us. Therefore, it’s a good idea to make such detergents yourself. It’s quite simple and very cheap. Let me show you a few of the recipes here. "I’ve always been very passionate about art", Hermance says during our visit. She was born in Paris but grew up "underneath the apple trees" in Normandy as she says. She did return to Paris, however, after finishing school because she wanted to study art history. Her parents – and especially her father – passed on this interest to her.
