There is something special about old-fashioned wax paper that the local grocer used to wrap the food in. You can make the most wonderful Christmas decorations out of these items. On the following pages, Mette will give you some inspiration and ideas. Apart from brown and white greaseproof paper, Mette has found some small angel scraps, a selection of cute Christmas motifs, ribbons, rhinestones, glitter and beads at flea markets and in DIY stores. If you visit markets regularly, always look for small, funny items for your Christmas decoration items. You can always use a piece of ribbon or a nice bead for something. WHAT YOU NEED: 1 pork belly1 small handful of sodium nitrite (ask the butcher)1 tsp black pepper, freshly ground1 pinch of ground cloves½ tsp ground allspice1-2 shallots1.7 oz (50 g) gelatin powder or 3 gelatin sheets1 string WHAT TO DO: Make sure that your pork belly isn’t too fat. Sprinkle sodium nitrite on top and leave it overnight in a cool place but not necessarily in the fridge. Blend onions and spices, and spread this mixture onto the entire pork belly. Roll it up. I love all the other seasons, but I also love winter. Each season is something special. At our latitude, winter brings a special kind of light and a special atmosphere. Denmark offers more than 5,000 miles of coastline, meaning that almost all areas in Denmark are close to the coast and that no Dane is more than 32 miles from the sea. Here, you really feel close to nature. The fine, white frost that covers everything is a piece of art in its own right. The same is true for the place where I live, in the middle of meadows and forests. I also have a lake and a creek in my backyard. One day, I was looking through an old Christmas book and I found the cutest, slightly oblong Christmas bells that would look great in my Christmas home. Sadly, I wasn’t able to find such bells with the right shape. During a trip to the local vegetable market, I saw some green cemetery vases on a shelf and that’s when I got the idea for this article. GINGERBREAD COOKIES 4 oz (125 g) butter⅓ cup (70 g) light syrup4.2 oz (125 g) brown sugar2½ cups (400 g) flour 3.5 oz (100 g) almonds2 tsp cinnamon½ tsp ground cloves½ tsp ground allspice1 tsp potash1 tbsp orange juice Melt butter and sugar. Mix spices and almonds with flour. Dissolve the potash in 1 tbsp of orange juice and mix it with the butter mixture. Stir everything and then knead it well. Make a roll and leave the dough in the fridge or freezer for at least 3 hours. Cut the roll into thin slices and place the cookies on a baking tray covered in greaseproof paper. Bake them in a pre-heated oven at 350° F (175° C) for approx. 6 minutes. CINNAMON COOKIES 1½ cups (250 g) flour½ cup…

Although it’s December, we don’t have to have Christmas lunches, duck and roast pork all the time. Our December menu consists of a delicious, homemade chicken salad and slow-roasted beef loin with homemade whisky sauce and sweet root vegetables. The dessert is a classic Danish rice pudding with almonds that adds a bit of a Christmas feel. The table has been laid with nice, old tableware with a golden rim and crystal glasses, a white tablecloth as well as green and red apples. When you use lots of candles, you create a fairy tale feel. Mette has made some wonderful decorations and wreaths out of airy materials that highlight this particular atmosphere. They are easy to make and require only a few materials – most of them from the forest. It’s a good idea to use lots of candles in one decoration. Use slim candles to create a particularly beautiful decoration. Place some candleholders in the decoration so that you can easily exchange the candles several times. One of the decorations has been made in a big, old clay dish that’s been filled with clay and lots of different types of moss, houseleeks and hyacinths, along with lots of candles. Decorating with dried flowers, leaves and pods is a trend that’s becoming more and more relevant in a world that’s become much more aware of consumption. Christmas is the perfect time to try out these ideas and the best way to do that is to dress your home for Christmas by using lots of natural materials in wonderful earthy colors, combined with coarse textiles and golden light. The beauty of laying a table with dried grasses, flowers or ferns is that the beautiful, golden color shades create a backdrop for a calming color scheme and a beautiful match for this festive season. SAFFRON TOFFEES 2 cups (5 dl) light syrup2¼ cups (5½ dl) unrefined sugar2 cups (5 dl) heavy cream3 tsp salt1.7 oz (50 g) salted butter1 g saffron Cover a tin that holds approx. 6.3 cups (1½ l) with greaseproof paper, including the edges. Mix all the ingredients in a thick-bottomed pan. Bring the mixture to the boil whist stirring with a heat-resistant spatula or whisk. Remember to touch the bottom at all times to make sure that the sugar mixture doesn’t burn! You’ll need to reach a temperature of 260° F (127° C). Pour the mixture into the tin and let it stiffen for at least 5 hours or overnight. Cut the mix into small pieces of the desired size and wrap them in wax paper or greaseproof paper. Store…
