DAIKON RADISH, SMOKED TROUT AND CUCUMBER ‘CAKE’
500g cream cheese or smooth cottage cheese
175ml mixed soft herbs, roughly chopped (for example, parsley, dill, rocket)
3 spring onions, roughly chopped
1 celery stick, roughly chopped zest and juice of half a lemon
1t Tabasco sauce
1 large daikon radish, peeled and thinly sliced with a mandolin
1 large cucumber, shaved into ribbons
350 to 400g smoked trout ribbons
18 quails’ eggs, hard boiled and peeled
3T lumpfish, salmon or trout roe or seaweed caviar olive oil, to drizzle
