egg and tater bake
1 pound (4 cups) frozen potato tots2 tablespoons olive oil1 medium onion, finely choppedKosher salt and black pepper1 red pepper, cut into ¼-inch pieces8 ounces cremini mushrooms, halved (or quartered, if large)1 clove garlic, finely chopped3 plum tomatoes, cut into 1-inch pieces½ bunch fresh spinach, thick stems discarded, roughly chopped8 large eggs2 ounces extra-sharp cheddar, coarsely grated
