LEEK & CHESTNUT TWIST

INGREDIENTS
• 400g/14oz celeriac, peeled and roughly chopped • Olive oil, for drizzling • 10 shallots, peeled • 1 whole leek, whites and green leaves, sliced lengthways and well rinsed • 3 Granny Smith apples • 4 slices white bread, crusts removed, roughly torn • 7-8 chestnuts, peeled and chopped • 1½ tbsp sage leaves, chopped • ½ tbsp rosemary leaves, chopped • Sea salt • 2 sheets of ready-rolled puff pastry • 4 tsp agave syrup • 4 tsp rapeseed oil • Fresh rosemary sprigs and dried cranberries to garnish (optional) 1.
