With an Oscar, a Golden Globe, a Brit and many others to his name, Sir Elton John’s collection of music awards is well documented. Less well known, however, is his winning collection of vintage photos. Sir Elton (left, in 1988 with some of his art collection) will show off his Art-Time Love later this year with an exhibition of rare works at London’s Tate Modern. The Big Picture singer has been acquiring Modernist photos for more than two decades, building one of the world’s largest collections. The exhibition, which opens in November, will comprise 150 pictures from the 1920s to the 1950s. STUFFED SADDLE OF LAMB WITH SPINACH, GARLIC AND SAFFRON JUS Serves 6-8 Preparation time 15-20 minutes Cooking time 1¼ hours, plus cooling INGREDIENTS • 1 saddle of lamb (with kidneys)• 200g/7oz caul fat (available from your local butcher)• Salt and freshly ground black pepper• 20 cloves of garlic, peeled• 100g/4oz butter• Olive oil, for roasting• 100ml/4fl oz double cream• 900g/2lb washed and ready-prepared spinach• 2 egg yolks• large onion, peeled and chopped• 125ml/4½fl oz sweet white wine• 2 pinches saffron strands• 500ml/18fl oz chicken stock 1.
