1 cup quinoa, rinsed, drained1 tablespoon olive oil500g lean pork mince1 long fresh red chilli, deseeded, finely chopped2 garlic cloves, crushed1 stick lemongrass, white part only, finely chopped2 bunches broccolini, cut into 4cm lengths1 large carrot, grated1 red capsicum, diced160g bean sprouts2 tablespoons gluten-free hoisin sauce8 large lettuce leaves, to serve
