NEW POTATO, RADISH & CHIVE SALAD WITH FETA DRESSING
Serves: 4
500g baby new potatoes, halved 100g radishes, thinly sliced into rounds ½ cucumber, quartered and sliced 3 large handfuls of watercress, tough stems removed, torn into small sprigs A handful of chives, including flowers FETA DRESSING
150g feta cheese, crumbled 125ml plain low-fat yoghurt Freshly squeezed juice of 1 lemon 1 large garlic clove, crushed 2 large handfuls of mint, finely chopped Sea salt and freshly ground black pepper 1 Cook the potatoes in plenty of boiling salted water for 12-15 minutes until tender, then drain and transfer to a large serving bowl.
2 Meanwhile, to make the dressing, blitz the feta cheese, yoghurt and lemon juice in a blender until smooth and creamy, then pour into a bowl.…
