‘Eat balanced food, follow the seasons, be responsible, enjoy eating, and make room to indulge now and then.’ This is the refreshingly down-to-earth philosophy of Danish chef Trine Hahnemann, author of Scandinavian Comfort Food: Embracing the Art of Hygge (Quadrille, £25). ‘I’m not a fan of food trends that dictate rules about what we should and shouldn’t eat; just keeping up with all the rules is stressful. I juice, I eat grains, meat, fish and lots of cooked and raw vegetables, but I also appreciate cake and a glass of wine.’
Hahnemann’s back-to-basics approach reminds us of generations gone by, when people took time to cook, enjoying the process, and when mealtimes were sociable affairs where people lingered around the table, rather than rushing to prepare something before wolfing it…
