Nenue Sea Chub
If you haven’t tried the nenue yet, rush to your nearest market and get one. It’s inexpensive compared to other white-meat fish, very adaptable to cooking methods, and delicious. The nenue is mild and stays juicy and tender no matter how it’s cooked.
Nenue, which average 2 to 5 pounds, have a fairly broad body, but are flat from side to side, so the fillets are thin. When alive and swimming, the nenue are more colorful than the muddy-gray seen in the market.
Try this versatile fish fried, baked, broiled, poached, in soups and chowders, or raw.
