5 pounds tuna, cut into1 ⁄2-inch cubes4 fresh limes1 ⁄2 cup rock salt2 cups green onion2 large carrots, diced1 medium sweet onion, diced4 large cucumbers, peeled, seeded and diced3 large tomatoes, seeded and diced Salad oil for frying5 packages mai fun noodles
VINAIGRETTE
1 ⁄4 cup oil1 tablespoon lime juice1 ⁄2 tablespoon grated ginger11 ⁄2 teaspoons sugar
PREPARATION
Squeeze limes, and mix juice with rock salt. Add fish to mixture, and marinate 15 minutes. Rinse fish cubes gently in a colander. Combine fish with diced vegetables, toss, cover, and refrigerate.
Pour salad oil into a wok or deep pan, and cook mai fun noodles until puffy. Arrange noodles on a large platter.…
