Billfish conjure up images of charterboats, trophies and a thrilling fight between an angler and a powerful ocean giant. For some reason, we rarely think about eating them. Even in the old days, Hawaiians only considered billfish “fairly good,” not nearly as favored as aku.
The billfish mystique has fooled us all. Those large fish of which dreams are made, as well as Hawai‘i’s other billfish, are as tasty, easy to cook and versatile as Hawai‘i’s more popular eating fish.
Billfish is very lean, so you must be careful not to overcook it. Billfish are good fried, poached, and marinated and then broiled. They are also excellent in soups and stews.
