Pink, Red, Yellow and Gray Snapper
The snappers are a colorful family with members that are red (ehu and onaga, or ‘ula ‘ula), pink (‘opakapaka and kalekale) and gray (uku). Snappers provide something for everyone; consumers, who love the moist, mild meat; chefs, who can prepare the fish with ease and create spectacular presentation; and fishermen who get pretty prices for them.
