■ I’m not always inspired when it’s time to cook dinner. When I have no energy to go to the store, I look around in the fridge and find the usual itemstomatoes, bell peppers, zucchini, mushrooms, cheese, Greek olives (obviously the emergency ingredients for Mediterranean-style cooking). What’s in the cupboard? Pasta of every shape and size for the Mediterranean in the house, canned tomatoes, sun-dried tomatoes, vinegars, chicken and vegetable broth, herbs galore, bottled olives, capers (and everything I need for Asian-style cooking, but that’s a column for another month). And, there’s always fish in the freezer. At my house, the fish stays in the freezer for emergency recipe testing.
