■ In Hawaii, ‘ahi is one of the most favored fish, eaten both raw and cooked. In fact, after the May issue when we featured barbequed ‘ahi recipes, many of you wrote or called asking for recipes for cooking ‘ahi indoors, and we’re happy to oblige.
We in Hawaii are way ahead of the game in recognizing the healthy, low fat source of protein that fish provides in our diets. ‘Ahi, the name used in reference to larger varieties of island tunas (Big Eye, Allison Yellowfin, and Albacore), has the highest amount of protein of twenty types of fish caught in Hawaiian waters.
