SEAFOOD CHOWDER A LA BETTY C II
Six slices bacon, chopped fine2 onions, preferably Maui, chopped fine2 dozen clams in shell½ lb. shelled, uncooked shrimp1 lb. fish filet*, cut bite size½lb. scallops, halved2 cups Oreida hash brown potatoes, frozen Flour, salt, pepper, Lawry’s Seasoned Salt1½ quarts milk1 pint ½ & ½ cream4 Tbsp butter½ cup chopped chivessaloon pilot biscuits
In a 6 quart, heavy aluminum or cast iron pot, slowly fry bacon until crisp. Remove and save. Cook chopped onions in bacon fat until limp.
In separate 3 quart pot, put fish filets, scallopsand shrimp. Cpver with 3½ cups water, bring to a boil, cook 5 minutes. Remove fish, scallops and shrimp, set aside. Save cooking water.
