WATER SKIERS SEAFOOD SOUP
2 tbsp, oil, pref, olive
2 medium sized onions, chopped
3 cloves garlic, crushed
1 green pepper, chopped
1 tsp. basil
½ tsp. rosemary and thyme
1 large can (26 oz.) condensed tomato soup
1 cup dry white wine
1 can (14 oz.) chicken broth
1 package frozen clams in shell—scrubbed
8 oz. frozen shrimp, cooked
1 lb. fresh fish—ono, mahi, opakapaka filet
Heat oil in large heavy pot over medium heat. Add onions, garlic, green pepper. Cook until onion is limp. Stir in basil, rosemary, thyme, tomato soup, wine and broth. Bring to boil. Add clams, shrimp, fish. Cover, reduce heat, simmer until clams open and fish is done.
