Basic Poke
INGREDIENTS
1 pound red-meat fish¼ to ½ cup limu, washed and chopped into 1 to 2 inch pieces1 tablespoon Hawaiian salt1 or 2 red Hawaiian chili peppers, seeded and minced2 tablespoons sesame oil
PREPARATION
Cut the fish into ½-inch cubes, and refrigerate while preparing the rest of the dish. Combine the limu, salt, peppers and sesame seed oil. Add the fish, and mix until well coated. Chill until ready to serve.
SERVES 3 to 6
VARIATION
You can add chopped or ground kukui nuts (if you can get them), 4 green onions, chopped, and even a small tomato, chopped, if you prefer.
