WATERMELON COOLER
150g watermelon ¼ lemon, juiced Fresh mint leaves, to garnish 1 Mash the watermelon in a bowl. Add the lemon juice. Sieve the fluid into a glass. Serve garnished with fresh mint leaves.
PICK 'N' MIX SALAD
As a general principle, use one or more items from each category:
Lightly cooked vegetables: Asparagus, broccoli, roast cauliflower.
Cooked grains/legumes: Quinoa, brown or wild rice, beluga lentils.
Salad ingredients: Tomatoes, leafy greens, cucumber, radish, red onion.
Herbs: Mint, basil, oregano.
Seeds: Pumpkin, sunflower, pine nuts (lightly dry toasted in pan), pomegranate seeds.
Protein: Boiled egg, feta, cooked chicken or tuna.
1 Mix all the ingredients in a bowl tossed with olive oil and lemon juice.
