The salmon and brown rice make this bowl rich in zinc, an immune-boosting mineral which 11 per cent of New Zealand women fall short of. Adding the onion increases the absorption of zinc in the rice.
The bowl also provides selenium and vitamin E, both of which strengthen the immune system function. Make sure you soak both the brown rice and the Brazil nuts before cooking to lower levels of phytic acid, which can inhibit zinc absorption.
