Although commonly considered to be a berry, this juicy festive favourite is actually a member of the rose family. Higher in vitamin C than oranges, strawberries are also a source of potassium, folate, iodine and fibre. Once picked, they don’t continue to ripen, so look out for red, plump, firm specimens when stocking your fridge.
1 Strawberry salad
Combine a few handfuls of baby spinach leaves with a punnet of fresh strawberries, hulled and sliced, and ¼ cup of toasted, sliced almonds. In another bowl, make a simple salad dressing from olive oil and balsamic vinegar, adding sugar and salt to taste. Pour over the salad and toss to combine. Sprinkle with ½ cup of crumbled feta cheese and serve immediately.
