• 4 x 110g chicken breast steaks• 2 tblsps light soy sauce• 2 tblsps hoisin sauce• 1 tblsp sweet chilli sauce• 4 white bread rolls, halved for salad filling
• 1 small Lebanese cucumber, trimmed• 1 small carrot, peeled, coarsely shredded• ¹/ ³ cup fresh coriander leaves• 2 green spring onions, thinly shredded• 1 long red chilli, deseeded, thinly shredded 1 Combine chicken and soy sauce in a large bowl. Toss to coat. Stand for 10 minutes. Drain chicken. Pat dry with absorbent kitchen paper.
2 To make salad, use a vegetable peeler to peel cucumber lengthways into long, thin ribbons. Place in a bowl with carrot, coriander, onions and chilli. Mix well.
