PASTA WITH CARAMELIZED ONIONS AND MUSHROOMS

3 tablespoons extra-virgin olive oil2 8-ounce containers sliced mushrooms (white, cremini or a mix)2 medium or 1 large onion, halved and thinly sliced1 teaspoon paprikaKosher salt and freshly ground pepper12 ounces whole-wheat spaghetti⅓ cup sour cream2 teaspoons white wine vinegar½ cup fresh parsley, chopped½ cup fresh dill, chopped½ small bunch chives, thinly sliced
1. Heat 1 tablespoon olive oil in a large dutch oven or wide pot over medium-high heat. Add the mushrooms and cook, undisturbed, until they are lightly browned and they start to soften, about 5 minutes.
