1 pound lean ground turkey1 small onion (¾ thinly sliced, ¼ minced)2 cloves garlic, minced½ teaspoon ground coriander½ teaspoon chili powderKosher salt and freshly ground pepper1 large eggplant, cut into ½-inch-thick rounds⅓ cup extra-virgin olive oil, plus more for the grill4 pitas, tops trimmed3 cups shredded iceberg lettuce¾ cup olive hummusVegetable chips, for serving
