GARLIC-CITRUS ROAST TURKEY

1 stick unsalted butter, at room temperature2 large cloves garlic, finely grated, plus 1 head, halved2 teaspoons dried oregano1 teaspoon ground corianderPinch of red pepper flakes1 lemon, zest grated, fruit reserved and halved½ orange, zest grated, fruit reservedKosher salt and freshly ground pepper1 12-to 14-pound turkey, thawed if frozen, giblets removed (neck reserved)1 onion, quartered1 carrot, chopped1 stalk celery, chopped
1. Mash the butter with the grated garlic, oregano, coriander, red pepper flakes, lemon zest, orange zest, 1 teaspoon salt and a few grinds of pepper in a bowl. Spoon onto a piece of plastic wrap and shape into a log. Wrap and refrigerate until firm, at least 1 hour.
