CHICKEN
➧ 4-6 chicken breast fillets, cubed
MARINADE
➧ 1 onion, roughly chopped➧ 2 tomatoes, cut into quarters➧ 2 chillies, chopped➧ 2-3 garlic cloves, chopped➧ 30ml (2T) almond flakes➧ juice and grated zest of 1 lemon➧ a handful of fresh coriander➧ 30ml (2T) roasted curry powder➧ 2,5ml (½t) each salt and turmeric➧ 5-10ml (1-2t) chilli powder➧ 10ml (2t) cornflour, mixed with 15ml (1T) water➧ 60ml (¼c) cream
SALSA
➧ 12 cherry tomatoes, cut into quarters, OR 2 tomatoes, diced➧ 1 red onion, diced➧ 1 chilli, chopped➧ 15ml (1T) fresh, chopped parsley➧ 30ml (2T) white wine vinegar➧ 5ml (1t) sugar➧ salt and freshly ground pepper
TO SERVE
➧ fresh coriander, chopped➧ 4-6 poppadoms➧ cooked basmati rice
