OPEN GREEK-STYLE SALAD SANDWICHES
PREP 10 MIN SERVES 4 (AS A MAIN MEAL)
125g reduced-fat feta
120g reduced-fat Greek natural yoghurt
2 cloves garlic, finely grated
2 tomatoes, deseeded, finely chopped
1 large Lebanese cucumber, finely chopped
10 pitted black olives, roughly chopped
½ red onion, thinly sliced
1 tbsp finely chopped mint, plus extra leaves, to serve
Juice of ½ lemon
8 thick slices sourdough bread or gluten-free bread
1 Put the feta, yoghurt and garlic in a small food processor. Process until thick and smooth. Season with pepper and transfer to a small bowl. Cover and keep in the fridge until ready to use.
